Scene breaks and special characters
The "* * *" between scenes, the dialogue dash and other signs.
- To separate two scenes, type
***or---at the start of an empty line, or choose Insert → Scene separator.
In the book it shows as a centered "* * *".

Insert → Special character, grouped by type. The ones you use often stay handy under Recently used.
Paste without another program's formatting
Paste without formatting (Ctrl+Shift+V⌘⇧V) pastes the text without its font or colors.
